There’s something about oysters on the grill that feels a little wild in the best way—salty, smoky, buttery, and built for sharing around the fire. This Cowboy Butter Grilled Oyster recipe takes that briny bite and dresses it up with a rich, herby butter full of garlic, lemon, and a little kick of spice.


For this one, we kept it classic Toadfish style: using the 8" Abalone Handled Chef Knife to chop up the herbs and prep the ingredients, then grabbing the Olive Wood Oyster Knife to shuck the oysters. Or, you can use the Put Em Back Oyster Knife or Professional Oyster Knife to get the job done just as well. Once everything hits the heat, the butter melts down into every shell and turns a simple oyster into something seriously special.

  • 1/4 Cup Minced Shallots
  • 1 Tbsp Minced garlic
  • 1 Tbsp Fresh chopped parsley
  • 1 Tbsp Fresh chopped chives
  • 1 Tbsp Lemon Juice
  • 2 Tsp Red pepper flakes
  • 2 Tsp Paprika
  • Salt to taste

How to Do I Make Cowboy Butter Grilled Oysters?

So you've assembled your ingredients, now here's how to make those Cowboy Butter Oysters!

  • Step 1: Start by finely chopping your herbs with the Toadfish 8" Abalone Handled Chef Knife.
  • Step 2: In a bowl, mix together the softened butter, minced garlic, chopped parsley, chopped chives, a squeeze of fresh lemon, red pepper flakes, paprika, and a pinch of salt.

  • Step 4: Place the shucked oysters on the grill-safe oyster tray (we recommend a tray from our friends at “The Oyster Bed”) or directly on a steady cooking surface.
  • Step 5: Spoon a little cowboy butter onto each oyster.
  • Step 6: Grill until the oysters are hot and the butter is melted and bubbling.
  • Step 7: Carefully remove, serve right away, and enjoy!
