There is nothing I love more than a fresh snack at the beach! Through my years sitting on the salty beaches of South Carolina with a rumbling stomach, I have run the gambit on snacks! I have tried chips, pretzels, and sandwiches. But nothing ever scratches the itch like something juicy and full of flavor. Over years of research and development, I have come up with a solution. My go-to beach snack now takes some prep but is entirely worth it. This ceviche is the best traveling snack you could ask for!

The Easiest Ceviche For A Beach Bum

Ingredients

    • 1/2 a red onion, Diced
    • 1 teaspoon kosher salt
    • 1/4 teaspoon cracked black pepper
    • 3/4 cup freshly squeezed lime juice
    • 2 garlic cloves minced into a paste-like consistency 
    • 1 fresh jalapeño pepper seeded and thinly diced.
    • 1 pound fresh fish- sea bass, red snapper, mahi-mahi, wahoo, shrimp, and grouper – diced into 1/2-inch cubes.
    • 1/4 cup fresh cilantro, chopped (Optional)
    • 1 cup grape or cherry tomatoes, sliced or cut in half 
    • 1/2 cup thinly diced cucumber

Directions

Step 1

Dice the red onion thinly and place into a bowl with salt, pepper, and lime juice, coating well.

Step 2

Add the fish, garlic, and fresh jalapeno, and gently mix.

Step 3

Add the tomatoes, cucumber, and cilantro, give a stir, and marinate in the refrigerator for at least 45 minutes before serving. The longer you marinate the more firmer and cooked the fish will be.

Step 4

Before serving, taste and adjust the salt and heat.
