Don't throw away your leftover corned beef from your St. Patrick's day celebrations! Instead, let's make these delicious Reuben slider sandwiches that have layers of beef, and cheese, all topped with sauerkraut. The sweetness of the Hawaiian rolls is the cherry on top of this amazing recipe!
2 cups shredded corn beef (cooked)
1 ½ cups sauerkraut (drained)
3 tablespoons thousand island dressing
6 slices swiss cheese
12 Hawaiian sweet rolls
¼ cup butter
¼ tsp. beef broth (powder)
1 tsp. minced garlic
1 tbsp. parmesan cheese (grated)
1 tsp. dried thyme
Preheat oven to 375 degrees Fahrenheit.Slice sweet rolls in the middle to create a top and bottom. Place the top to the side.
Place the bottom part of the sweet rolls to an oven safe pan. Spread the thousand island dressing over the top of the bottom of the sweet rolls. Spread sauerkraut over the dressing, then top with a layer of corned beef.
Place the swiss cheese evenly over the corned beef and then place the tops of the sweet rolls on top to close the sandwich. In a small pan over medium high heat, melt butter and add the remaining topping ingredients. Cook for a minute, or until butter becomes a little brown.
Brush the top of the sweet rolls with the butter mixture.Bake for 10 minutes or until the cheese has melted and the top is a beautiful golden hue. Serve.
